"Intensely yellow-golden in color and shining like a freshly polished cup, the 2005 L'Ame de la Terre Extra Brut displays a deep, intense and beautifully matured bouquet of a vinous Champagne. Aged on the second lees for ten years, the blend of 60% Pinot Meunier, 30% Chardonnay and 10% Pinot Noir is a mouth-filling, pure, dry and complex cuvée with dark bread and lemon juice flavors, refreshing purity and terroir character. The finish is clean, fresh, tightly structured, remarkably finessed and stimulating. There is nothing spectacular here except for its authenticity, natural beauty and great digestibility. This is the kind of Champagne that you don't want to switch away from, because it never makes you tire of it but instead makes you long for more and more and more... Should I say I love it?
